Glair omelet with shrimps and goat cheese Directions
Defrost shrimps, peel and remove heads.
Whip egg whites with salt to the solid foam. Still whipping, add milk gradually. Finely chop the dill and combine with the egg whites. Stir gently.
Heat the butter on the frying pan. Pour the glair mass in the pan, cover with a lid and cook an omelet over middle heat for 3 minutes. Swap.
Mash goat cheese with fork. Sprinkle omelet with cheese, place the shrimps on one part of omelet and roll it in half. Warm up under the lid for another two minutes.
Serve omelet with fresh herbs, seasonal vegetables and toasts.
